The Art of Honey Processing: Unlike washed or natural coffees, this Tabi underwent a highly meticulous Honey Process. The cherries were picked at peak ripeness (22 degrees Brix) and fermented anaerobically for 24 hours in stainless steel tanks. After being pulped, the beans underwent another 18 hours of anaerobic fermentation in their own sweet mucilage (the "honey"). Finally, the coffee was dried in a precise three-stage process combining open-air dehydration, mechanical drying, and 12 days on raised beds. This intense attention to detail unlocks an intensified sweetness and a rich, syrupy mouthfeel.
