Grown Amongst the Birds in the High Andes

Nestled in the rugged mountains of Curití, Santander, this lot represents a pinnacle of high-altitude coffee cultivation. Produced by grower Juan David Jiménez Forero at Hacienda La Pradera, this coffee thrives in a privileged microclimate at 2,000 meters (6,500 ft) above sea level. The cool Andean nights and shaded canopy allow for a slow maturation of the cherries, resulting in the sweetness and density that defines this specialty lot.

The Varietal: Colombia Amarillo

While traditional Colombian coffee is known for its bright red cherries, the Colombia Amarillo is a rare and striking cultivar whose fruit ripens to a brilliant, golden yellow. This variety is highly prized by specialty roasters for its vibrant citric acidity and a naturally dense, syrupy body—the perfect canvas for the intricate honey processing used for this lot.
